- For the Meatballs:
- 1 lb ground beef (80/20)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- For the Onion Mushroom Gravy:
- 2 tablespoons butter
- 1 large onion, thinly sliced
- 8 oz cremini mushrooms, sliced
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1/2 cup heavy cream
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- For the Mashed Potatoes:
- 2 lbs russet potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Make the meatballs: In a large bowl, combine ground beef, breadcrumbs, milk, egg, Parmesan, garlic, salt, pepper, oregano, and basil. Mix until just combined.
- Shape into 1.5-inch meatballs. Place on a baking sheet lined with parchment paper.
- Heat a large skillet over medium-high heat. Add a drizzle of oil and brown the meatballs on all sides (about 2-3 minutes per side). Remove and set aside.
- Make the gravy: In the same skillet, melt butter. Add onions and cook until softened and golden, about 8-10 minutes.
- Add mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
- Sprinkle flour over the onions and mushrooms. Stir and cook for 1 minute.
- Gradually pour in beef broth while stirring. Bring to a simmer until thickened.
- Stir in heavy cream and Worcestershire sauce. Season with salt and pepper.
- Return meatballs to the skillet. Cover and simmer on low for 15-20 minutes until cooked through.
- Meanwhile, make the mashed potatoes: Place potatoes in a pot and cover with salted water. Bring to a boil and cook until tender, about 15 minutes.
- Drain potatoes and return to pot. Add butter and milk. Mash until smooth and creamy. Season with salt and pepper.
- Serve meatballs and gravy over mashed potatoes.
Notes
For extra flavor, you can add fresh thyme to the gravy. If the gravy is too thick, add more broth to reach desired consistency.
