These BBQ Chicken Grilled Cheese Sandwiches are a delicious twist on the classic, combining smoky barbecue chicken with melted cheese and crispy bread. Perfect for a quick and satisfying meal.

- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 8 slices sourdough bread
- 4 tablespoons butter, softened
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- Optional: red onion slices, jalapeño slices
Instructions
- In a medium bowl, mix the shredded chicken with barbecue sauce until well coated.
- Spread butter on one side of each bread slice.
- Place 4 bread slices, buttered side down, on a work surface. Top each with a generous amount of the BBQ chicken mixture.
- Sprinkle mozzarella and cheddar cheese over the chicken. Add optional toppings if desired.
- Top with remaining bread slices, buttered side up.
- Heat a large skillet or griddle over medium heat. Cook sandwiches for 3-4 minutes per side, until golden brown and cheese is melted.
- Serve immediately.
Notes
For extra flavor, try adding a little smoked paprika to the chicken mixture. You can also use any type of bread you prefer.
