- 4 (6 oz) salmon fillets, skin on
- Salt and pepper to taste
- 2 tablespoons olive oil
- For the Lemon Dijon Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 clove garlic, minced
- 2 tablespoons chopped fresh dill
- 1/4 cup panko breadcrumbs
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season salmon fillets with salt and pepper on both sides. Place skin-side down on the prepared baking sheet.
- In a small bowl, mix together mayonnaise, Dijon mustard, lemon juice, lemon zest, minced garlic, and dill.
- Spoon the lemon dijon sauce evenly over each salmon fillet.
- Sprinkle panko breadcrumbs over the sauce, pressing gently to adhere.
- Drizzle olive oil over the top.
- Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork, and the topping is golden and crispy.
- Serve immediately, garnished with additional fresh dill if desired.
Notes
For extra crispy topping, you can broil for the last 1-2 minutes. Watch carefully to avoid burning.
