- 4 boneless, skinless chicken breasts
- 4 slices deli ham
- 4 slices Swiss cheese
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (or melted butter, for brushing)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
- Place each chicken breast between two pieces of plastic wrap and pound to an even thickness of about 1/4 inch.
- Season both sides of each chicken breast with salt and pepper.
- Lay one slice of ham and one slice of Swiss cheese on each chicken breast. Roll up tightly from the short end, tucking in the sides to enclose the filling. Secure with toothpicks if needed.
- Set up a breading station: in a shallow bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, and paprika.
- Coat each chicken roll first in flour, shaking off excess, then dip in egg, and finally roll in the breadcrumb mixture, pressing gently to adhere.
- Place the breaded chicken rolls seam-side down on the prepared baking sheet. Brush lightly with olive oil or melted butter.
- Bake for 25–30 minutes, or until the chicken is cooked through and the coating is golden and crisp. Remove toothpicks before serving.
- Let rest for 5 minutes before slicing and serving.
Notes
For a crispier crust, you can broil the chicken for the last 2–3 minutes of baking. Toothpicks are essential to keep the roll intact during baking. Serve with a side of steamed vegetables or a simple salad.
