Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss cauliflower florets with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
  3. In a small saucepan, heat heavy cream, garlic, thyme, and red pepper flakes over medium heat. Simmer gently for 5 minutes, then remove from heat.
  4. Place roasted cauliflower in an 8×8-inch baking dish. Pour the cream mixture over the cauliflower.
  5. Sprinkle with mozzarella and Parmesan cheese.
  6. Scatter cherry tomatoes on top.
  7. Bake for 20-25 minutes, until bubbly and golden on top.
  8. Garnish with fresh basil and serve warm.
