Description

Juicy beef meatballs baked with potatoes and mushrooms in a rich tomato sauce. A comforting one-pan meal.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 large potatoes, peeled and diced
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 2 cups crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine ground beef, breadcrumbs, egg, garlic, Parmesan, salt, and pepper. Mix gently and shape into 1.5-inch meatballs.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Brown meatballs on all sides, about 5 minutes. Remove and set aside.
  4. In the same skillet, sauté onions and mushrooms until softened, about 4 minutes.
  5. Add diced potatoes, crushed tomatoes, oregano, basil, and red pepper flakes. Stir to combine.
  6. Nestle the meatballs back into the skillet among the potatoes and mushrooms.
  7. Cover and bake for 30 minutes, then uncover and bake for another 15 minutes until potatoes are tender and sauce thickens.
  8. Let rest for 5 minutes before serving.

Notes

For a lighter version, use ground turkey. Serve with crusty bread or over pasta.
