Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with silicone liners.
- In a medium bowl, whisk together eggs, milk, salt, and black pepper until well combined.
- Stir in diced red bell pepper, crumbled bacon, and shredded cheddar cheese.
- Divide the egg mixture evenly among the muffin cups, filling each about 2/3 full.
- Bake for 15-18 minutes, or until the muffins are set and lightly golden on top.
- Let cool in the pan for 2 minutes, then remove and serve warm.
Notes
