Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix cornmeal, flour, baking powder, salt, and pepper.
  2. In a separate bowl, whisk milk and egg. Pour into dry ingredients and stir until just combined.
  3. Fold in Parmesan and parsley.
  4. Heat oil in a deep skillet to 350°F (175°C). Drop spoonfuls of batter into hot oil.
  5. Fry until golden brown, about 2-3 minutes per side. Drain on paper towels.
  6. Serve immediately with extra Parmesan if desired.

Notes

For extra crispiness, let batter rest 10 minutes before frying.
