Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sliced almonds
  • 1 cup pitted dates, chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
  5. Fold in the sliced almonds and chopped dates.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Notes

For extra chewiness, use Medjool dates. You can also toast the almonds lightly before adding for more depth of flavor.
