Description
These air fryer lemon pepper chicken skewers are juicy, tangy, and ready in under 40 minutes. Perfect for a quick weeknight dinner or a healthy meal prep option.
Ingredients
Scale
- 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 teaspoons lemon pepper seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers (if using wooden, soak in water for 20 minutes before grilling)
Instructions
- In a medium bowl, whisk together olive oil, lemon juice, lemon zest, lemon pepper seasoning, garlic powder, salt, and black pepper.
- Add chicken cubes and toss to coat evenly. Cover and refrigerate for at least 15 minutes (or up to 2 hours) to marinate.
- Preheat air fryer to 400°F (200°C).
- Thread marinated chicken onto skewers, leaving a small gap between pieces for air circulation.
- Place skewers in the air fryer basket in a single layer, ensuring they are not overcrowded. Cook in batches if needed.
- Air fry at 400°F for 10-12 minutes, flipping halfway through, until chicken is golden brown and internal temperature reaches 165°F.
- Remove from air fryer and let rest for 2 minutes. Serve warm with lemon wedges and fresh herbs if desired.
Notes
For extra flavor, add a pinch of red pepper flakes to the marinade. If using wooden skewers, soaking prevents burning. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
