Ingredients
Scale
- 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup cornstarch
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon honey
- 1 teaspoon lime juice
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- 1. In a shallow bowl, place cornstarch. In a second shallow bowl, place beaten eggs. In a third shallow bowl, place panko breadcrumbs.

- 4. Preheat air fryer to 375°F (190°C). Lightly spray air fryer basket with cooking spray.
- 5. Place skewers in a single layer in the basket (work in batches if needed). Spray tops with cooking spray.
- 6. Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F).
- 7. While chicken cooks, make sauce: whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
- 8. Drizzle sauce over cooked skewers or serve on the side.
Notes
For a gluten-free version, use gluten-free panko and cornstarch. Skewers can be baked at 400°F for 15-18 minutes if you don’t have an air fryer.
