- 2 lbs beef chuck, cubed
- 3 large carrots, sliced
- 2 onions, chopped
- 4 garlic cloves, minced
- 4 cups beef broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Add onions and garlic, cook until softened.
- Stir in carrots, beef broth, salt, pepper, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove bay leaves before serving.
Notes
For a spookier flavor, add a pinch of smoked paprika.
