- 2 pounds beef chuck, cubed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the cubed beef and brown on all sides, about 5 minutes.
- Add the chopped onion and garlic, cooking until softened, about 3 minutes.
- Stir in carrots, potatoes, beef broth, red wine, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer covered for 2 hours, or until meat is tender.
- Remove bay leaves before serving.
Notes
For a magical touch, add a pinch of cinnamon or smoked paprika. Serve with crusty bread.
