Description

A hearty and spooky beef stew perfect for Halloween, featuring tender beef and seasonal vegetables simmered in a flavorful broth.


Ingredients

  • 2 pounds beef chuck, cubed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the cubed beef and brown on all sides, about 5 minutes.
  3. Add the chopped onion and garlic, cooking until softened, about 3 minutes.
  4. Stir in carrots, potatoes, beef broth, red wine, bay leaves, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer covered for 2 hours, or until meat is tender.
  6. Remove bay leaves before serving.

Notes

For a magical touch, add a pinch of cinnamon or smoked paprika. Serve with crusty bread.
