- 2 pounds beef stew meat, cubed
- 3 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Add onion and garlic; cook until softened.
- Pour in beef broth and add carrots, potatoes, bay leaves, and thyme.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until meat is tender.
- Season with salt and pepper before serving.
Notes
For a spookier presentation, serve in a cauldron-shaped bowl.
