Description

A hearty beef stew with a spooky twist, perfect for Halloween.


Ingredients

  • 2 pounds beef stew meat, cubed
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Add onion and garlic; cook until softened.
  4. Pour in beef broth and add carrots, potatoes, bay leaves, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until meat is tender.
  6. Season with salt and pepper before serving.

Notes
