  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 3 tablespoons cocoa powder
  • 1 cup Coca-Cola
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the frosting:
  • 1/2 cup unsalted butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons Coca-Cola
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar
  • 1 cup chopped pecans (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In a saucepan over medium heat, combine 1 cup butter, 3 tbsp cocoa, and 1 cup Coca-Cola. Bring to a boil, then remove from heat.
  4. Pour hot mixture over dry ingredients and stir until combined.
  5. Add buttermilk, eggs, and 1 tsp vanilla. Mix well.
  6. Pour batter into prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  7. While cake bakes, make frosting: Melt 1/2 cup butter with 3 tbsp cocoa and 6 tbsp Coca-Cola in a saucepan. Bring to a boil, then remove from heat.
  8. Whisk in powdered sugar and 1 tsp vanilla until smooth. Stir in pecans if using.
  9. Pour warm frosting over hot cake immediately after removing from oven. Spread evenly.
  10. Let cool completely before serving.

Notes

For best results, use regular Coca-Cola (not diet). The cake tastes even better the next day as the flavors meld. Store covered at room temperature for up to 3 days.
