- 4 lb Pumpkin (skin & seeds removed – cut into chunks)
- 1 Medium Onion (chopped)
- 1 Bell Pepper (chopped)
- 5 Cloves Garlic
- 1 Tbsp Sea Salt

- 1 Tsp Pumpkin Spice
- ½ Tsp Vanilla Bean or ¾ Tsp Vanilla
- 4 Cups Vegetable Stock
- 1 ½ Tsp Apple Cider Vinegar
- 1 ½ Cup Coconut Cream
- 2 Tsp Olive Oil
- 2 Tbsp Chives or Scallions (diced)

Instructions
