Description

A moist and flavorful cake made with ripe bananas, vanilla, and walnuts, perfect for an easy bake.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla.
  5. Mix in the mashed bananas and sour cream until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier version, substitute whole wheat flour and reduce sugar by 1/4 cup.
