Crunchy Chicken Caesar Sandwich

A delicious twist on the classic Caesar salad, featuring crispy chicken, creamy dressing, and crunchy romaine in a soft sandwich roll.

For the Crust:

  • 2 boneless, skinless chicken breasts, pounded thin
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 4 sandwich rolls or ciabatta buns
  • 2 cups chopped romaine lettuce
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt and pepper. Dredge in beaten eggs, then coat with mixture of panko and Parmesan.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden and cooked through. Set aside.
  3. In a bowl, mix mayonnaise, lemon juice, and minced garlic to make the Caesar dressing.
  4. Slice rolls open and lightly toast if desired. Spread Caesar dressing on both sides of each roll.
  5. Place a crispy chicken breast on the bottom half of each roll. Top with chopped romaine lettuce and the top half of the roll.
  6. Serve immediately while chicken is still warm and crunchy.

Notes

You can customize the seasonings to taste.
