A delicious twist on the classic Caesar salad, featuring crispy chicken, creamy dressing, and crunchy romaine in a soft sandwich roll.

For the Crust:
- 2 boneless, skinless chicken breasts, pounded thin
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/2 cup mayonnaise
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 4 sandwich rolls or ciabatta buns
- 2 cups chopped romaine lettuce
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt and pepper. Dredge in beaten eggs, then coat with mixture of panko and Parmesan.
- Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden and cooked through. Set aside.
- In a bowl, mix mayonnaise, lemon juice, and minced garlic to make the Caesar dressing.
- Slice rolls open and lightly toast if desired. Spread Caesar dressing on both sides of each roll.
- Place a crispy chicken breast on the bottom half of each roll. Top with chopped romaine lettuce and the top half of the roll.
- Serve immediately while chicken is still warm and crunchy.
