  • 1small white onion, diced
  • 1garlic clove, minced
  • 1lb lean ground turkey
  • 2 tbsptaco seasoning (adjust to taste)
  • 14 ozcanned black beans, drained and rinsed
  • 14 ozcanned diced tomatoes (undrained)
  • 12small flour tortillas
  • 1 cupshredded cheddar cheese

Instructions

  1. Preheat theovento 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft.
  3. Add ground turkey, breaking it apart as it cooks until browned.
  4. Stir in taco seasoning, black beans, and diced tomatoes; cook for 5 minutes.
  5. Spoonthe mixture onto tortillas, top with cheese, fold, and arrange in abaking dish.
  6. Bake for 10 minutes until cheese is melted and tortillas are crisp.

Notes
