For the Crust:
- For Base Recipe:
- 1/2 cup rolled oats
- 1/2 ripe banana
- 1/4 cup milk (any kind)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup
- 1 egg (or flax egg for vegan)
- Pinch of salt
- For Chocolate Chip:
- 1 tbsp chocolate chips
- For Blueberry Muffin:
- 1/4 cup blueberries
- 1/2 tsp cinnamon
- For Carrot Cake:
- 1/4 cup grated carrot
- 1/2 tsp cinnamon
- 1 tbsp raisins
- For Peanut Butter:
- 1 tbsp peanut butter
- 1/2 tsp cinnamon
- For Apple Cinnamon:
- 1/4 cup diced apple
- 1/2 tsp cinnamon
- For Double Chocolate:
- 1 tbsp cocoa powder
- 1 tbsp chocolate chips
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 350°F (180°C) and grease a small oven-safe ramekin.
- 2. Add all base ingredients to a blender and blend until smooth.
- 3. Pour half the batter into the ramekin.
- 4. Choose your variation and add those ingredients to the remaining batter, then pour on top.
- 5. For layered variations (like peanut butter), add some in the middle.
- 6. Bake for 20-25 minutes until set and slightly golden on top.
- 7. Let cool for 5 minutes before eating.
- 8. Top with extra toppings if desired (yogurt, nut butter, fruit).
Notes
Can be made vegan by using flax egg and plant milk. Store leftovers in fridge for 3 days or freeze. Double recipe for larger servings. Works great reheated in microwave.
