- 1 tsp peppermint extract
- For the topping:
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- 1/2 tsp peppermint extract
- 1/2 cup crushed Thin Mint cookies (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Make the crust: In a bowl, mix chocolate cookie crumbs and melted butter until combined. Press firmly into the bottom of the prepared pan. Bake for 8 minutes, then let cool slightly.
- Make the filling: In a saucepan over low heat, combine sweetened condensed milk, chocolate chips, and butter. Stir until melted and smooth. Remove from heat and stir in peppermint extract. Pour over the crust and spread evenly.
- Bake for 15 minutes, then let cool completely.
- Make the topping: In a small saucepan, heat chocolate chips and heavy cream over low heat, stirring until smooth. Remove from heat and stir in peppermint extract. Pour over the cooled filling and spread evenly.
- Sprinkle crushed Thin Mint cookies on top. Refrigerate for at least 2 hours before slicing into bars.
Notes
Store bars in an airtight container in the refrigerator for up to 5 days. For a stronger mint flavor, add an extra 1/4 tsp peppermint extract to the filling.
