- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 cup sour cream
Instructions
- Preheat oven to 350°F (175°C) and grease a tartlet pan.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- Press the mixture into the bottom of the tartlet pan and bake for 8 minutes.
- In another bowl, beat cream cheese and 1/2 cup sugar until smooth.
- Add eggs one at a time, then mix in lime juice, lime zest, and sour cream.
- Pour the filling over the crust and bake for 20-25 minutes or until set.
- Cool in the pan, then refrigerate for at least 2 hours before serving.
Notes
For a tangier flavor, add extra lime zest. Serve chilled with whipped cream.
