Description

A delightful mini dessert featuring a creamy lime cheesecake filling in a tartlet crust, perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a tartlet pan.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of the tartlet pan and bake for 8 minutes.
  4. In another bowl, beat cream cheese and 1/2 cup sugar until smooth.
  5. Add eggs one at a time, then mix in lime juice, lime zest, and sour cream.
  6. Pour the filling over the crust and bake for 20-25 minutes or until set.
  7. Cool in the pan, then refrigerate for at least 2 hours before serving.

Notes

For a tangier flavor, add extra lime zest. Serve chilled with whipped cream.
