For the Crust:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 bag tortilla chips, crushed
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 5 minutes.
- Layer half of the crushed tortilla chips in the bottom of a 9×13-inch baking dish.
- Spread the seasoned beef mixture over the chips, followed by black beans, corn, and salsa.
- Sprinkle with half of the shredded cheese, then top with remaining crushed chips.
- Bake for 20 minutes, then sprinkle with remaining cheese and bake for 5 more minutes until cheese is melted.
- Garnish with sour cream and green onions before serving.
