A delicious and easy-to-make taco casserole that combines all the flavors of tacos in a comforting baked dish.

For the Crust:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 cup tortilla chips, crushed
- 1/2 cup sour cream (optional)
- 1/4 cup chopped fresh cilantro (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 5 minutes.
- Add black beans, corn, and salsa to the skillet. Mix well.
- Transfer the mixture to a greased 9×13-inch baking dish. Top with shredded cheese and crushed tortilla chips.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let cool for 5 minutes before serving. Garnish with sour cream and cilantro if desired.
