Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the mashed sweet potato, rolled oats, and honey. Stir until well combined and a thick dough forms.
- Using a tablespoon or cookie scoop, portion the dough onto the prepared baking sheet. Flatten each portion slightly with the back of a spoon or your fingers to form cookie shapes.
- Bake for 15-18 minutes, or until the edges are lightly golden and the cookies are firm to the touch.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
