A creamy sweet potato casserole topped with gooey marshmallows, perfect for holiday meals.
Ingredients

- 3 cups mashed cooked sweet potatoes
- 1/2 cup granulated sugar
- 2 large eggs, beaten
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup miniature marshmallows
Instructions
- Preheat the oven to 350 degrees F (175 degrees C) and grease a 9×13 inch baking dish.
- In a large bowl, mix together the mashed sweet potatoes, sugar, eggs, salt, butter, milk, and vanilla extract until smooth.
- Spread the mixture evenly in the prepared baking dish.
- Bake in the preheated oven for 25 minutes.
- Remove from the oven and sprinkle the marshmallows evenly over the top.
- Return to the oven and bake for an additional 5-10 minutes, or until the marshmallows are golden brown.
Notes
For a nutty variation, add 1/2 cup of chopped pecans to the topping.
