Description

A creamy sweet potato casserole topped with gooey marshmallows, perfect for holiday meals.


Ingredients

  • 3 cups mashed cooked sweet potatoes
  • 1/2 cup granulated sugar
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup miniature marshmallows

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the mashed sweet potatoes, sugar, eggs, salt, butter, milk, and vanilla extract until smooth.
  3. Spread the mixture evenly in the prepared baking dish.
  4. Bake in the preheated oven for 25 minutes.
  5. Remove from the oven and sprinkle the marshmallows evenly over the top.
  6. Return to the oven and bake for an additional 5-10 minutes, or until the marshmallows are golden brown.

Notes

For a nutty variation, add 1/2 cup of chopped pecans to the topping.
