Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  3. Arrange the rounds on the baking sheet and bake for 20-25 minutes, or until tender.
  4. Remove from the oven and top each round with a slice of brie, cranberries, and pecans.
  5. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
