- 2 cups all-purpose flour
 - 1/2 cup granulated sugar
 - 1 tablespoon baking powder
 - 1/2 teaspoon salt
 - 1 cup milk
 - 1/4 cup vegetable oil
 - 1 large egg
 - 1 teaspoon vanilla extract
 
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
 - In a large bowl, whisk together the flour, sugar, baking powder, and salt.
 - In another bowl, mix the milk, oil, egg, and vanilla extract until well combined.
 - Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
 - Spoon the batter into the muffin cups, filling each about two-thirds full.
 - Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
 - Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
 
Notes
For extra fluffiness, sift the flour before measuring. Store in an airtight container for up to 3 days.
