These muffins are incredibly fluffy and easy to make at home.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then add milk and oil, mixing well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
For extra fluffiness, do not overmix the batter. Store muffins in an airtight container for up to 3 days.
