Description

A fresh and flavorful bowl featuring grilled steak, creamy avocado, roasted corn, and a zesty cilantro cream sauce.


Ingredients

  • 1 lb flank steak
  • 2 ripe avocados, sliced
  • 2 ears of corn, roasted
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 bunch cilantro, chopped
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • Juice of 2 limes
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat grill to medium-high heat.
  2. Season steak with salt and pepper, then grill for 5-7 minutes per side for medium-rare.
  3. While steak rests, roast corn on the grill until charred, about 10 minutes.
  4. In a blender, combine cilantro, sour cream, garlic, and lime juice; blend until smooth.
  5. Slice steak and assemble bowls with steak, avocado, roasted corn, tomatoes, and onion.
  6. Drizzle with cilantro cream sauce and serve immediately.

Notes

For a spicier version, add jalapeños to the sauce. Ensure corn is fully cooled before assembling.
