- 1 lb flank steak
- 2 ripe avocados, sliced
- 2 ears of corn, roasted
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 bunch cilantro, chopped
- 1/2 cup sour cream
- 2 cloves garlic, minced
- Juice of 2 limes
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat grill to medium-high heat.
- Season steak with salt and pepper, then grill for 5-7 minutes per side for medium-rare.
- While steak rests, roast corn on the grill until charred, about 10 minutes.
- In a blender, combine cilantro, sour cream, garlic, and lime juice; blend until smooth.
- Slice steak and assemble bowls with steak, avocado, roasted corn, tomatoes, and onion.
- Drizzle with cilantro cream sauce and serve immediately.
Notes
For a spicier version, add jalapeños to the sauce. Ensure corn is fully cooled before assembling.
