- 1 lb flank steak
- 2 ripe avocados, sliced
- 4 ears of corn, husked
- 1 cup fresh cilantro leaves
- 1/2 cup sour cream
- 2 cloves garlic, minced
- 1 lime, juiced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 red onion, thinly sliced
Instructions
- Preheat grill to medium-high heat.
- Rub steak with olive oil, salt, and pepper, then grill for 4-5 minutes per side for medium-rare. Let rest and slice.
- Roast corn on the grill, turning occasionally, until charred, about 10 minutes. Remove kernels from cob.
- In a blender, combine cilantro, sour cream, garlic, and lime juice; blend until smooth.
- Assemble bowls: Layer sliced steak, avocado, roasted corn kernels, and red onion.
- Drizzle with cilantro cream sauce and serve immediately.
Notes
For a spicier version, add chopped jalapeños to the sauce. Best served fresh.
