Description

A refreshing summer salad combining fresh spinach with juicy berries, citrus, crunchy pecans, tangy feta, and a sweet-tangy honey-balsamic dressing. Perfect as a light meal or side dish.

  • 6 cups fresh spinach leaves, washed and dried
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 mandarin oranges, peeled and segmented
  • 1/2 cup chopped pecans, toasted
  • 4 ounces feta cheese, crumbled
  • Dressing:
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the dressing:
  2. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper until well combined. Set aside.
  3. Assemble the salad:
  4. In a large salad bowl, add the fresh spinach leaves as the base.
  5. Top with blueberries, raspberries, mandarin orange segments, chopped pecans, and crumbled feta cheese.
  6. Drizzle the honey-balsamic dressing over the salad just before serving.
  7. Toss gently to combine all ingredients.

Notes
