Instructions

  1. Start by preheating your oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil. In a small bowl, mix together the salt, black pepper, chili powder, garlic powder, onion powder, and smoked paprika. Rub this spice mixture all over the chicken breasts, ensuring they are well-coated.
  2. In a large skillet, heat the remaining olive oil over medium-high heat. Sear the chicken on each side for 3-4 minutes, until golden brown. This helps lock in the moisture and adds a nice crust to the chicken. Transfer the seared chicken to the greased baking dish.
  3. Surround the chicken breasts with the sliced red and yellow bell peppers. If you want extra heat, add the sliced jalapeño on top. Sprinkle the shredded Monterey Jack cheese evenly over the chicken and peppers.
  4. Place the baking dish in the preheated oven and bake for about 25 minutes or until the chicken is fully cooked and the cheese is bubbly and golden. You’ll know it’s ready when the internal temperature of the chicken reaches 165°F (74°C).
  5. Once out of the oven, drizzle lime juice over the top and garnish with freshly chopped cilantro. Serve hot and enjoy the cheesy, spicy goodness!

Notes

Make it less spicy: Simply omit the jalapeños and reduce the amount of chili powder for a milder version.
Prep ahead: You can season and sear the chicken ahead of time. When you’re ready to bake, just add the peppers and cheese.
Add more vegetables: Feel free to add zucchini, mushrooms, or onions for more texture and flavor.
