- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet (1 oz) taco seasoning
- 1 pound Velveeta cheese, cubed
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Drain excess fat, then add onion and garlic; cook until softened.
- Stir in diced tomatoes with green chilies and taco seasoning; mix well.
- Add cubed Velveeta cheese and shredded cheddar cheese; stir until melted and smooth.
- Pour in milk to reach desired consistency; season with salt and pepper.
- Simmer for 5-10 minutes, stirring occasionally.
- Serve hot with tortilla chips.
Notes
For extra heat, add jalapeños or hot sauce to taste. Pairs well with nachos or as a dip for vegetables.
