Description

This spiced apple cider donut loaf is a delightful twist on traditional donuts, baked as a loaf with a crunchy cinnamon sugar crust.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup apple cider
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the crust: 1/4 cup granulated sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Gradually add dry ingredients alternately with apple cider, mixing until just combined.
  5. Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  6. While still warm, mix sugar and cinnamon for the crust and sprinkle over the top.

Notes

Best served warm. Can be stored in an airtight container for up to 3 days.
