For the Crust:

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream (optional for serving)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes, onion, bell pepper, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.
  3. Spread the mixture evenly in the prepared baking dish.
  4. Sprinkle both cheeses evenly over the top.
  5. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Let cool for 5 minutes before serving. Top with sour cream if desired.
