For the Crust:
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream (optional for serving)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes, onion, bell pepper, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.
- Spread the mixture evenly in the prepared baking dish.
- Sprinkle both cheeses evenly over the top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving. Top with sour cream if desired.
