For the Pork Chops:

  • 4 bone-in pork chops
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional for heat)

For the Gravy:

  • 2 tbsp unsalted butter
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper, to taste

For the Mashed Potatoes:

 

  • 6 medium russet potatoes, peeled and cubed
  • 1/2 cup milk (or more for desired creaminess)
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste
  • 1/4 cup sour cream (optional for extra creaminess)

Instructions

. Cook the Pork Chops:

  1. Season the pork chops with salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using).
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the pork chops for 3-4 minutes per side until golden brown and cooked through (internal temperature should reach 145°F).
  4. Remove the pork chops from the skillet and set aside.

2. Make the Gravy:

  1. In the same skillet, add butter and melt over medium heat.
  2. Add sliced onions and cook for 5-7 minutes, stirring occasionally, until soft and caramelized.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in flour and cook for 1-2 minutes to form a roux.
  5. Gradually pour in chicken broth, stirring constantly to prevent lumps.
  6. Stir in heavy cream, Worcestershire sauce, and dried thyme.
  7. Let the gravy simmer for 5-7 minutes until thickened. Season with salt and pepper to taste.
  8. Return the pork chops to the skillet, spooning the gravy over the top. Let everything simmer for another 5 minutes until heated through.

3. Make the Mashed Potatoes:

  1. In a large pot, add the peeled and cubed potatoes. Cover with water and bring to a boil.
  2. Reduce heat and simmer for 15-20 minutes, or until potatoes are fork-tender.
  3. Drain the potatoes and return them to the pot.
  4. Mash the potatoes with a potato masher or use a hand mixer for smoother potatoes.
  5. Stir in milk, butter, and sour cream (if using). Season with salt and pepper to taste.

4. Serve & Enjoy:

 

  1. Plate the mashed potatoes and top with the smothered pork chops and gravy.
  2. Garnish with fresh parsley or thyme if desired.
