These Southern-style honey butter cornbread poppers are crispy on the outside, moist inside, and infused with sweet honey butter for a delightful treat.

- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1/4 cup honey
- 2 large eggs
- 1/2 cup corn kernels (fresh or canned)
- Oil for frying
Instructions
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, honey, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just mixed. Fold in corn kernels.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Drop tablespoon-sized portions of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove poppers with a slotted spoon and drain on paper towels.
- Brush with additional honey butter while warm and serve immediately.
Notes
For extra flavor, add a pinch of cayenne pepper to the batter. Store leftovers in an airtight container.
