Description

These Southern-style honey butter cornbread poppers are crispy on the outside, moist inside, and infused with sweet honey butter for a delightful treat.


Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 2 large eggs
  • 1/2 cup corn kernels (fresh or canned)
  • Oil for frying

Instructions

  1. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  2. In another bowl, mix milk, melted butter, honey, and eggs until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just mixed. Fold in corn kernels.
  4. Heat oil in a deep fryer or large pot to 350°F (175°C).
  5. Drop tablespoon-sized portions of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  6. Remove poppers with a slotted spoon and drain on paper towels.
  7. Brush with additional honey butter while warm and serve immediately.

Notes

For extra flavor, add a pinch of cayenne pepper to the batter. Store leftovers in an airtight container.
