Ingredients

- 2 1/4 cups all-purpose flour
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1 1/2 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 1 egg
- 1 tsp vanilla extract
Instructions
- In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- In a large bowl, beat the butter, brown sugar, and molasses until creamy.
- Add the egg and vanilla extract and beat until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Divide the dough in half, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 350°F (175°C).
- On a floured surface, roll out dough to 1/4 inch thick.
- Cut out gingerbread men shapes and place on baking sheets.
- Bake for 8-10 minutes.
- Let cool on wire racks.
Notes
These cookies are best enjoyed with a glass of milk.
