Description

These soft, chewy gingerbread men cookies are perfect for the holidays. Made with molasses, ginger, and cinnamon for that classic flavor, they stay soft inside with a slightly crunchy edge.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup molasses
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For decoration: icing, sprinkles

Instructions

  1. 1. In a medium bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt. Set aside.
  2. 2. In a large bowl, beat the butter, molasses, and brown sugar together until creamy.
  3. 3. Add the egg and vanilla extract, mixing until well combined.
  4. 4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  5. 5. Divide the dough in half, wrap in plastic, and chill for at least 1 hour.
  6. 6. Preheat oven to 350°F (175°C). Roll out dough on a floured surface to 1/4-inch thickness.
  7. 7. Use a gingerbread man cookie cutter to cut out shapes. Place on a baking sheet lined with parchment paper.
  8. 8. Bake for 8-10 minutes, until edges are set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. 9. Decorate with icing and sprinkles as desired.

Notes

Store cookies in an airtight container at room temperature for up to 1 week. For extra softness, store with a slice of bread.
