- 1/2 cup unsalted butter, softened
- 3/4 cup molasses
- 3/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- For decoration: icing, sprinkles
Instructions
- 1. In a medium bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt. Set aside.
- 2. In a large bowl, beat the butter, molasses, and brown sugar together until creamy.
- 3. Add the egg and vanilla extract, mixing until well combined.
- 4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- 5. Divide the dough in half, wrap in plastic, and chill for at least 1 hour.
- 6. Preheat oven to 350°F (175°C). Roll out dough on a floured surface to 1/4-inch thickness.
- 7. Use a gingerbread man cookie cutter to cut out shapes. Place on a baking sheet lined with parchment paper.
- 8. Bake for 8-10 minutes, until edges are set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- 9. Decorate with icing and sprinkles as desired.
Notes
Store cookies in an airtight container at room temperature for up to 1 week. For extra softness, store with a slice of bread.
