Description

A quick and easy one-pan meal featuring smoked sausage, crispy potatoes, and tender green beans, perfect for a weeknight dinner.


Ingredients

  • 1 lb smoked sausage, sliced into 1/4-inch pieces
  • 1 1/2 lbs baby red potatoes, quartered
  • 1 lb fresh green beans, trimmed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced smoked sausage and cook for 4-5 minutes until browned. Remove sausage and set aside.
  3. In the same skillet, add quartered potatoes and diced onion. Cook for 10 minutes, stirring occasionally, until potatoes start to brown.
  4. Add minced garlic, paprika, salt, and black pepper. Cook for 1 minute.
  5. Stir in green beans and chicken broth. Cover and simmer for 10-12 minutes until potatoes are tender and green beans are crisp-tender.
  6. Return sausage to the skillet and stir to combine. Cook for another 2-3 minutes to heat through.
  7. Serve hot.

Notes

For extra flavor, you can add a dash of cayenne pepper. Leftovers store well in the fridge for up to 3 days.
