A quick and easy one-pan meal featuring smoked sausage, crispy potatoes, and tender green beans, perfect for a weeknight dinner.

- 1 lb smoked sausage, sliced into 1/4-inch pieces
- 1 1/2 lbs baby red potatoes, quartered
- 1 lb fresh green beans, trimmed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chicken broth
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced smoked sausage and cook for 4-5 minutes until browned. Remove sausage and set aside.
- In the same skillet, add quartered potatoes and diced onion. Cook for 10 minutes, stirring occasionally, until potatoes start to brown.
- Add minced garlic, paprika, salt, and black pepper. Cook for 1 minute.
- Stir in green beans and chicken broth. Cover and simmer for 10-12 minutes until potatoes are tender and green beans are crisp-tender.
- Return sausage to the skillet and stir to combine. Cook for another 2-3 minutes to heat through.
- Serve hot.
Notes
For extra flavor, you can add a dash of cayenne pepper. Leftovers store well in the fridge for up to 3 days.
