- 1 lb smoked sausage, sliced into 1/2-inch rounds
- 1 lb fresh green beans, trimmed
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp onion powder
- Salt and pepper to taste
- 1/4 cup chicken broth (optional for extra moisture)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sliced smoked sausage, green beans, baby potatoes, olive oil, garlic, paprika, onion powder, salt, and pepper until evenly coated.
- Spread the mixture in a single layer on a large baking sheet or in a baking dish.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are tender and sausage is browned.
- If using, drizzle with chicken broth during the last 5 minutes for extra moisture.
- Serve hot and enjoy!
Notes
For a crispier texture, broil for the last 2-3 minutes. This recipe can be adapted for stovetop cooking in a large skillet over medium heat for 15-20 minutes.
