For the Crust:
- For the oatmeal base:
- 1 cup steel-cut oats
- 4 cups water
- 1 cup almond milk (or milk of choice)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 tablespoons maple syrup or honey
- For toppings:
- 1 cup mixed berries (fresh or frozen)
- 1 banana, sliced
- 1/4 cup chopped pecans
- Additional maple syrup for drizzling
Instructions
1. Prepare the Crust:
- 1. Lightly grease the inside of your slow cooker with cooking spray or butter.
- 2. Add steel-cut oats, water, almond milk, vanilla extract, cinnamon, salt, and maple syrup/honey to the slow cooker. Stir well.
- 3. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours (oats should be tender and creamy).
- 4. Stir oatmeal before serving. If too thick, add a splash of milk to reach desired consistency.
- 5. Divide into bowls and top with berries, banana slices, pecans, and a drizzle of maple syrup.
Notes
Leftovers keep refrigerated for up to 4 days. Reheat with extra milk to loosen texture. For vegan version, ensure maple syrup is used instead of honey.
