- 2 lemons, juiced and zested

Instructions
- Step 1: In a slow cooker, add the sliced onion and place the chicken thighs on top.
- Step 2: In a bowl, mix the lemon juice, zest, garlic, thyme, rosemary, salt, and pepper. Pour over the chicken.
- Step 3: Add the rice and chicken broth to the slow cooker, ensuring the rice is submerged.
- Step 4: Cover and cook on low for 4-6 hours, or until chicken is tender and rice is cooked.
- Step 5: Stir gently before serving, and drizzle with olive oil if desired.
