For the Crust:

- 1.5 lbs beef sirloin, cut into 1-inch cubes
- 1.5 lbs baby potatoes, halved
- For the Garlic Butter Sauce:
- 1/2 cup unsalted butter, melted
- 6 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- For Garnish:
- Fresh parsley, chopped
- Grated parmesan cheese (optional)
Instructions
1. Prepare the Crust:
- 1. In a slow cooker, combine beef cubes and halved baby potatoes.
- 2. In a bowl, whisk together melted butter, minced garlic, parsley, thyme, rosemary, salt, and pepper.
- 3. Pour the garlic butter sauce over the beef and potatoes, tossing gently to coat evenly.
- 4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until beef is tender and potatoes are soft.
- 5. Garnish with fresh parsley and parmesan cheese (if using) before serving.
Notes
For extra flavor, sear beef cubes in a skillet before adding to the slow cooker. Adjust salt to taste as butter brands vary in saltiness.
