For the Crust:

  • For the Beef & Potatoes:
  • 1.5 lbs beef sirloin, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved
  • For the Garlic Butter Sauce:
  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For Garnish:
  • Fresh parsley, chopped
  • Grated parmesan cheese (optional)

Instructions

1. Prepare the Crust:

  1. 1. In a slow cooker, combine beef cubes and halved baby potatoes.
  2. 2. In a bowl, whisk together melted butter, minced garlic, parsley, thyme, rosemary, salt, and pepper.
  3. 3. Pour the garlic butter sauce over the beef and potatoes, tossing gently to coat evenly.
  4. 4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until beef is tender and potatoes are soft.
  5. 5. Garnish with fresh parsley and parmesan cheese (if using) before serving.

Notes

For extra flavor, sear beef cubes in a skillet before adding to the slow cooker. Adjust salt to taste as butter brands vary in saltiness.
