Description

A simple and hearty side dish featuring tender green beans and potatoes cooked low and slow with smoked meat in a slow cooker. Perfect for a comforting, country-style meal.


Ingredients

  • 2 lbs fresh green beans, trimmed and cut into 2-inch pieces
  • 2 lbs baby potatoes, halved or quartered
  • 1 lb smoked ham or bacon, cubed
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • Salt and pepper, to taste

Instructions

  1. Place the green beans, potatoes, smoked meat, onion, and garlic in the slow cooker.
  2. Pour the chicken broth over the ingredients.
  3. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  5. Taste and adjust seasoning before serving.

Notes

For extra flavor, you can add a bay leaf or thyme during cooking. If using smoked sausage, cut into 1-inch pieces. This dish is gluten-free and can be made ahead.
