- 2 lbs baby potatoes, halved or quartered
- 1 lb smoked ham or bacon, cubed
- 1 large onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- Salt and pepper, to taste
Instructions
- Place the green beans, potatoes, smoked meat, onion, and garlic in the slow cooker.
- Pour the chicken broth over the ingredients.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
- Taste and adjust seasoning before serving.
Notes
For extra flavor, you can add a bay leaf or thyme during cooking. If using smoked sausage, cut into 1-inch pieces. This dish is gluten-free and can be made ahead.
