A hearty and delicious slow cooker soup with chicken, Parmesan, and Italian flavors.
Ingredients

- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 can (15 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Place chicken, onion, garlic, carrots, celery, tomatoes, broth, oregano, and basil in slow cooker.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Stir in Parmesan cheese until melted. Season with salt and pepper.
Notes
Serve with warm bread. Store leftovers in fridge for up to 3 days.
