Description

A hearty and delicious slow cooker soup with chicken, Parmesan, and Italian flavors.


Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 can (15 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Place chicken, onion, garlic, carrots, celery, tomatoes, broth, oregano, and basil in slow cooker.
  2. Cook on low for 6-7 hours or high for 3-4 hours.
  3. Stir in Parmesan cheese until melted. Season with salt and pepper.

Notes

Serve with warm bread. Store leftovers in fridge for up to 3 days.
