Description

A refreshing salad combining crisp apples, peppery arugula, and a light vinaigrette.


Ingredients

  • 4 cups fresh arugula
  • 2 medium apples, thinly sliced
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the arugula, sliced apples, walnuts, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Serve immediately.

Notes

For a vegan version, omit the feta cheese.
