  • 1 pound of seafood, such as calamari, shrimp, or fish
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh thyme
  • 1/4 cup olive oil
  • 1 (14.5 oz) can of diced tomatoes
  • 1/4 cup white wine
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a large baking dish with olive oil.
  2. In a large bowl, combine seafood, onion, celery, bell pepper, parsley, thyme, and olive oil.
  3. In a small bowl, mix together diced tomatoes, white wine, salt, and black pepper.
  4. Pour the mixture into the baking dish.
  5. Bake for 25 minutes, or until seafood is cooked through.
  6. Serve hot with a dollop of basil pesto or parsley pesto on top. Enjoy!
