These savory cheddar mashed potato muffins are a delicious way to use up leftover mashed potatoes. Packed with cheese and herbs, they make a perfect side dish for any meal.

- 2 cups cold mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup milk
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- Step 2: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, chopped green onions, all-purpose flour, beaten eggs, garlic powder, dried thyme, salt, and pepper.
- Step 3: Stir in the milk until the mixture is well combined and forms a batter.
- Step 4: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Step 5: Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Step 6: Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
These muffins can be made ahead and reheated in the oven or microwave. For extra flavor, add bacon bits or diced ham. Store leftovers in an airtight container in the refrigerator for up to 3 days.
